A generous palate with a touch of elegance. Balanced tannin weight, fruit, and texture. Seamless and refined, oak secondary to plums and cherry fruit, finish with dark spices.
The wine is fermented in traditional open-top concrete fermenters for seven days, before pressing. Part of the wine completes malolactic ferment in old wood (the balance in stainless). After nine months the wine is blended and lightly fined before bottling.
Cook up a winter stew and enjoy in front of a warm fire or savour on a summer afternoon with a grazing board filled with cured meats and cheeses.
